Macadamia Crusted Halibut




I invented this recipe
based on several baked halibut recipes and some comments made by friends about their favorite ways to cook halibut.

Macadamia Crusted Halibut

Makes: 3 servings

Ingredients
1 lb halibut filets, skinless
1 green onion, thinly sliced
1 tbsp red bell pepper, minced
1/3 cup mayonnaise
1 tbsp fresh lime juice
1 dash hot sauce (I used Cholula)
1 clove garlic, minced
3 tbsp macadamia, finely chopped
3 tbsp Parmesan, grated
¼ cup Panko
Cooking spray
             

Directions
1. Preheat oven to 450

2. In a small bowl mix onion, red bell pepper, mayonnaise, lime, hot sauce, and garlic.

3. In a separate bowl mix macadamia, Parmesan, and Panko.

4. Spray 8” x 8” plan with cooking spray. Place halibut, skin side down, in pan.  Cover all exposed halibut surfaces with mayonnaise mixture.  Cover mayonnaise with breading.






Just Out of the Oven
5. Cook for 15-20 min (depends on the thickness of your filet).  Remove just before perfectly done (fish flakes, but some clear remains in the center).  Let halibut rest for 3-5 min.  The halibut should finish cooking during this resting period.

Plated
6.  Serve with favorite side dish.
